A taste of Malaysia on the West Coast: Chef Subhashini brings bold southeast Asian flavours to Rock & Reef

Food has a remarkable way of keeping home alive, no matter how many miles lie between where you started and where you landed. For Chef Subhashini, who made Mauritius her home after getting married, her kitchen remains a direct bridge to her Malaysian heritage.

“I moved to Mauritius after I got married, and over the years it has truly become home,” Subhashini shares. “But no matter where I am, Malaysia will always be a part of me, especially through my cooking. Whenever I’m in the kitchen, it brings back memories of cooking with my family, celebrating festivals, and sharing meals together. Living in Mauritius has made me want to keep those traditions alive and share them with others. Seeing someone taste Malaysian food for the first time and fall in love with it is one of the most rewarding feelings for me.”

On Sunday, 9 August, Subhashini is taking over the kitchen at Rock & Reef Grill and Bar in Black River for a one-off Malaysian Buffet. Set against the breezy backdrop of the island’s west coast, the feast promises an authentic exploration of Southeast Asian comfort food.

Decoding the Malaysian Palate

For many diners across Mauritius, Malaysian cuisine remains an uncharted territory, often mistakenly conflated solely with fire and spice. Subhashini is quick to clarify the nuance behind her native cooking.

“I always say Malaysian food is full of surprises. It’s not just spicy, as many people think,” she explains. “It’s a beautiful balance of sweet, savoury, tangy, creamy and aromatic flavours, all coming together in one meal. Every dish has its own personality, and every bite tells a story. More than anything, Malaysian food is about bringing people together. It’s meant to be shared, enjoyed slowly, and remembered long after the meal is over.”

Navigating different spice tolerances is a delicate balance when introducing regional dishes to a diverse audience, but Subhashini’s approach focuses on depth rather than raw heat.

“For me, authenticity is very important because I want people to experience Malaysian food as it’s meant to be enjoyed,” she says. “But I also understand that everyone has a different tolerance for spice. So I keep the dishes rich in flavour without making them overwhelmingly hot, and I always serve extra sambal on the side. That way, people who love spice can add as much as they like, while those trying Malaysian food for the first time can enjoy all the flavours comfortably.”

The August 9 Spread: Signature Delicacies

The buffet menu reads as a rich roll call of Malaysian classics, anchored by time-honoured techniques and essential ingredients.

“There are a few dishes that simply have to be on the menu,” Subhashini notes. “Starting with our Malaysian national dish Nasi Lemak, Chicken Rendang is one of them. It’s slow cooked for hours until the spices are rich and the chicken is incredibly tender. We’ll also have Chicken and Lamb Satay with homemade peanut sauce, which is always a favourite. Laksa is another dish I’m really excited to share because it’s packed with flavour and so comforting. Guests can also enjoy Ikan Bakar, Mee Goreng, authentic sambals, and traditional Malaysian desserts—and to end it, the star of the show: Teh Tarik, Malaysia’s famous pulled tea.”

Pulling off these distinct profile notes requires a mix of fresh local produce and specialised sourcing. While Subhashini grows her own pandan leaves in Mauritius and makes full use of the island’s abundant seafood and fresh herbs, bringing the true taste of Malaysia to Black River required some international logistics.

“Mauritius has amazing fresh produce, especially seafood, herbs and vegetables, and I’ve been pleasantly surprised by how well they work in many Malaysian dishes,” she explains. “But there are certain ingredients that simply can’t be substituted if you want the authentic taste. Thanks to Rock & Reef, who helped import things like Malaysian spice pastes, dried chillies, shrimp paste, and a few traditional seasonings, those flavours are what make Malaysian food unique. It’s a combination of the best local ingredients and authentic Malaysian essentials.”

Shared Traditions and Island Parallel

The natural synergy between the two islands makes the collaboration a fitting one. Both Malaysia and Mauritius boast vibrant, multi-ethnic culinary landscapes shaped by Chinese, Indian, and coastal influences.

“That’s actually one of the things I love most about living here,” says Subhashini. “Both countries have such a rich mix of cultures, and you can see that reflected in the food. We both love bold flavours, curries, rice, noodles and meals that bring families together. Even though the recipes are different, there’s a familiar warmth and comfort that I think people instantly recognise. That’s why I believe Mauritians connect so naturally with Malaysian cuisine.”

Hosted at Rock & Reef in Black River, the event is designed as a full-day coastal escape, complete with pool and beach access included alongside the buffet spread.

“I want people to walk in feeling excited and leave feeling like they’ve travelled to Malaysia for an afternoon,” she says. “It’ll be relaxed, with free access to the pool and beach, filled with delicious aromas and vibrant flavours. I want guests to take their time, enjoy each dish, chat with family and friends, and simply have a wonderful experience.”
